P-P-P-P-Power Breakfast. Protein Pancakes for Pancake Day or Post workout

Screen Shot 2015-02-11 at 13.11.41Its Shrove Tuesday so I wanted to share my favourite protein pancake recipe. Standard Pancakes are pretty lousy for anyone on a diet but you can tweak them easily to make healthier versions that I think taste even better.

This is a great saturday post training treat you can change the topping according to your preference but berries are fab mixed into the batter I also like a savoury pancake with chives and goats cheese topping.

Try experimenting with different flour bases, too try quinoa flour for a lower sugar pancake or add a little coconut flour for a sweeter taste.

  • Get Set
  • 1/2 cup gluten-free old-fashioned rolled oats
  • 1/2 medium banana
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 large egg whites (or 1 egg)
  • 1/4 cup fat free (or low-fat) cottage cheese
  • 1-2 tablespoons unsweetened vanilla almond milk
  • Go
  • Place all ingredients in a blender and blend until completely smooth, about 30 seconds.
  • Lightly coat a large nonstick skillet or griddle with butter or cooking spray and heat over medium low heat. Drop batter by 1/4 cup onto skillet. Wait to see small bubbles before flipping.
  • Add desired toppings such as chocolate chips or blueberries. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat with more cooking spray and remaining batter. Makes 3-4 pancakes
