Regular lifting takes its toll on the body and tears down plenty of muscle mass – all of which needs to be repaired with adequate supplies of dietary protein – thoughts of lovely roasted or bbq meats, bacon or eggs with added cheese always spring to my mind first but the higher fat content of these lovely things are not suitable for eating all the time, and when we are looking to be a little more conservative with our calories we often forget the humble fish !! 🙁
Fish is delicious, fast and simple to cook absorbs strong and aromatic flavours like a sponge and provides a much leaner source of protein to add variety to our meals.
I understand many people are put off fish due to texture or ‘fishiness!’ so I have thrown together this spicy fish dish to test you all out and convince you it might just be something you could try and love.
Try my ‘Pukka Pickled Fish Curry and let me know what you think.
This recipe is enough for 3-4 portions for me (a short gal) or perhaps 2-3 for a hungry guy!
Get Set:
- 550G of white fish (I use the cheap odd cuts from the supermarket freezer any will do!)
- 1x packet microwave lemon basmati rice, or cook your own favourite.
Finely Chop:
- 1x chinese white lettuce
- 1x yellow pepper
- 100g fine green beans
- 1 red chilli + seeds
- 2x garlic segments
- 2cm knob of ginger
Have ready:
- 1 lemon
- 3 tablespoons of white wine vinegar
- 1 teaspoon of black onion seeds
- 1 tablespoon turmeric powder
G0:
Heat a large pan to medium heat with Sesame oil or butter,
Chuck into the pan all of the chopped ingredients, the onion seeds and squeeze in all of the lemon juice. Stir and let it all wilt down a little without letting it dry out 2-4 mins.
Lay all the white fish on top of the ingredients add the white wine vinegar and and cover the pan to let the fish steam onto of the veg in the juices of the dish for 2-3 minutes- if it is a little dry you can add a dash of water.
Remove the lid and the fish should be almost cooked through I stir it into the veg breaking up the fillets in the process add the turmeric powder and stir in well.
Pop the rice in the microwave and let the fish simmer on low heat stirring well until cooked through.
Serve rice and curry together with a dollop of fresh plain yoghurt 🙂
